Ingredients

For the Dough
  • 4 cups all-purpose flour
  • 1 cup warm whole milk
  • teaspoons active dry yeast
  • ¼ cup granulated sugar
  • ¼ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
Cinnamon Filling
  • ½ cup unsalted butter, softened
  • ¾ cup packed brown sugar
  • 2 tablespoons ground cinnamon
  • Pinch of salt
Cream Cheese Frosting
  • 4 ounces cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk if needed

Method

  1. In a large bowl, combine the warm milk and sugar. Sprinkle the yeast over the top and let it sit for 5-10 minutes until foamy.
  2. Stir in the melted butter, vanilla, and salt. Gradually add the flour and mix until a soft dough forms.
  3. Knead the dough for 8-10 minutes until smooth and slightly tacky.
  4. Place the dough in a lightly greased bowl, cover, and let it rise for 1-1½ hours, or until doubled in size.
  5. Roll the dough into a 14×18-inch rectangle.
  6. Spread the softened butter over the dough, then sprinkle evenly with the brown sugar, cinnamon, and salt.
  7. Roll the dough tightly into a log from the long side.
  8. Slice into 12 equal rolls and place them in a greased 9×13-inch baking dish.
  9. Cover and let the rolls rise for another 30-45 minutes.
  10. Meanwhile, preheat the oven to 350°F (175°C).
  11. Bake for 22-28 minutes, or until lightly golden and cooked through.
  12. While the rolls bake, beat together the cream cheese, butter, powdered sugar, vanilla, and enough milk to make a smooth frosting.
  13. Let the cinnamon rolls cool for about 10 minutes before spreading the frosting over the top.
  14. Serve warm and enjoy.

Notes

  • If your yeast doesn't foam, start again with fresh yeast.
  • Avoid adding too much extra flour; slightly sticky dough makes softer rolls.
  • Dental floss creates cleaner slices than a knife.
  • Let the rolls cool for about 10 minutes before frosting so it melts into the swirls without becoming runny.
