Ingredients
  

  • 2 large flour tortillas
  • 2 teaspoons olive oil
  • 2 cloves garlic minced
  • 4 cups fresh baby spinach
  • ½ cup crumbled feta cheese
  • ½ cup shredded mozzarella optional
  • ¼ teaspoon black pepper
  • Salt to taste
  • ¼ teaspoon red pepper flakes optional

Method
 

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the minced garlic and cook for about 30 seconds until fragrant.
  3. Stir in the spinach and cook until just wilted, about 2–3 minutes.
  4. Remove from the heat and let the spinach cool slightly.
  5. Mix in the feta cheese, mozzarella (if using), black pepper, and red pepper flakes.
  6. Lay the tortillas flat and divide the filling evenly between them.
  7. Fold in the sides and roll each tortilla tightly into a wrap.
  8. Place the wraps seam-side down in a clean skillet over medium heat.
  9. Cook for 2-3 minutes per side until golden brown and crispy.
  10. Slice in half and serve warm with tzatziki, hummus, or a simple salad.

Notes

  • Squeeze excess moisture from the spinach before mixing with the cheese.
  • Don't overfill the wraps to prevent tearing.
  • Add grilled chicken or chickpeas for extra protein.
  • Frozen spinach works well, just thaw and drain thoroughly.
