Ingredients
  

  • 8 oz 225 g halloumi cheese, cut into 1-inch cubes
  • 1 red bell pepper cut into chunks
  • 1 yellow bell pepper cut into chunks
  • 1 medium zucchini sliced into thick rounds
  • 1 small red onion cut into wedges
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 2 garlic cloves minced
  • 1 tsp dried oregano
  • ½ tsp kosher salt
  • ¼ tsp freshly cracked black pepper
  • 1 tbsp chopped fresh parsley optional, for garnish
  • Lemon wedges for serving

Method
 

  1. If using wooden skewers, soak them in water for at least 30 minutes.
  2. Cut the halloumi and vegetables into evenly sized pieces.
  3. In a large bowl, combine the olive oil, lemon juice, garlic, oregano, salt, and black pepper.
  4. Add the halloumi and vegetables, then gently toss until everything is evenly coated.
  5. Thread the halloumi and vegetables onto the skewers, alternating the ingredients.
  6. Preheat an outdoor grill or grill pan over medium-high heat.
  7. Grill the skewers for 8-10 minutes, turning every 2-3 minutes until the halloumi is golden and the vegetables are lightly charred and tender.
  8. Garnish with fresh parsley, serve with lemon wedges, and enjoy immediately.

Notes

  • Pat the halloumi dry before marinating for better browning.
  • Cut the vegetables into similar-sized pieces so they cook evenly.
  • Don't overcook the halloumi, it should be golden on the outside and soft inside.
  • Add mushrooms, cherry tomatoes, or eggplant for extra variety.
  • Serve with tzatziki, hummus, whipped feta, or warm pita bread for a complete Mediterranean meal.
