Ingredients
  

  • 2 ripe peaches diced
  • 1 small red onion finely chopped
  • 1 small tomato chopped (optional)
  • 1 small jalapeño finely chopped (adjust to taste)
  • 1 –2 tbsp fresh coriander cilantro, chopped
  • Juice of 1 lime
  • 1 tsp honey optional
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Dice the peaches into small bite-sized cubes and add them to a mixing bowl.
  2. Finely chop the red onion, jalapeño, tomato, and coriander. Add them to the bowl.
  3. Squeeze in fresh lime juice and mix gently.
  4. Add salt, black pepper, and honey if using. Stir lightly to combine without mashing the peaches.
  5. Let the salsa rest for 10 minutes so the flavours blend.
  6. Taste and adjust seasoning before serving.

Notes

  • Use ripe but firm peaches for best texture
  • Adjust spice level by increasing or skipping jalapeño
  • Best served fresh but can be refrigerated for up to 1-2 days
  • Optional twist: add mango or pineapple for a tropical version
