Method
- Dice the peaches into small bite-sized cubes and add them to a mixing bowl.

- Squeeze in fresh lime juice and mix gently.
- Add salt, black pepper, and honey if using. Stir lightly to combine without mashing the peaches.
- Let the salsa rest for 10 minutes so the flavours blend.
- Taste and adjust seasoning before serving.

- Use ripe but firm peaches for best texture
- Adjust spice level by increasing or skipping jalapeño
- Best served fresh but can be refrigerated for up to 1-2 days
