Ingredients
  

Peach Filling
  • 4 cups fresh peaches peeled and sliced (or canned peaches, drained)
  • ½ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1 tablespoon cornstarch
Cobler Topping
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup milk
  • ½ cup unsalted butter melted
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 350°F (180°C) and lightly grease a 9×13-inch baking dish.
  2. In a large bowl, combine the peaches, sugar, lemon juice, cinnamon, and cornstarch. Toss until the peaches are evenly coated.
  3. In another bowl, whisk together the flour, sugar, baking powder, and salt. Stir in the milk and vanilla extract until just combined.
  4. Pour the melted butter into the prepared baking dish, then pour the batter over the butter. Do not stir.
  5. Spoon the peach mixture evenly over the batter without mixing. As it bakes, the batter will rise around the peaches to create the cobbler topping.
  6. Bake for 40–45 minutes, or until the top is golden brown and the peach filling is bubbling around the edges.
  7. Let the cobbler cool for 10–15 minutes before serving. Enjoy warm on its own or with a scoop of vanilla ice cream.

Notes

  • Fresh peaches provide the best flavor, but canned or frozen peaches work well too.
  • If using canned peaches in heavy syrup, drain them well before using.
  • Avoid overmixing the batter to keep the topping light and tender.
  • Let the cobbler rest before serving so the filling has time to thicken.
