Ingredients

  • 1 teaspoon baking powder
  • Pinch of salt
  • ¾ cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter or oil

Method
 

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Add the milk, vanilla extract, and melted butter or oil.
  3. Mix gently until just combined. Do not overmix the batter. A few lumps are completely fine.
  4. Let the batter rest for 3-5 minutes for extra fluffy pancakes.
  5. Heat a lightly greased pan on medium heat.
  6. Pour small circles of batter onto the pan. Once bubbles appear on the surface, flip the pancakes carefully.
  7. Cook the other side until golden brown.
  8. Serve warm with maple syrup, fruit, chocolate spread, or your favorite toppings.
  9. Do not overmix the batter or the pancakes can turn dense.
    Medium heat works best for evenly cooked fluffy pancakes.
    Fresh baking powder makes a huge difference in texture.
