- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the milk, vanilla extract, and melted butter or oil.
- Mix gently until just combined. Do not overmix the batter. A few lumps are completely fine.
- Let the batter rest for 3-5 minutes for extra fluffy pancakes.
- Heat a lightly greased pan on medium heat.
- Pour small circles of batter onto the pan. Once bubbles appear on the surface, flip the pancakes carefully.
- Cook the other side until golden brown.
- Serve warm with maple syrup, fruit, chocolate spread, or your favorite toppings.
