Ingredients
  

  • 1 ciabatta loaf or 2 ciabatta rolls or sourdough
  • 8 oz 225 g fresh mozzarella, sliced
  • 2 medium ripe tomatoes sliced
  • 8-10 fresh basil leaves
  • 2 tablespoons balsamic glaze
  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons pesto optional
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

Method
 

  1. Slice the ciabatta or sourdough in half and brush the cut sides with olive oil.
  2. Toast the bread in a skillet, grill pan, or oven until lightly golden and crisp.
  3. Layer the fresh mozzarella, tomato slices, and basil leaves on the bottom half of the bread.
  4. Season with salt and black pepper.
  5. Drizzle with balsamic glaze and spread pesto on the top half of the bread if using.
  6. Close the sandwich, press gently, slice in half, and serve immediately.

  • Fresh mozzarella gives the best creamy texture and authentic flavor.
