Ingredients
  

  • 250 g pasta penne or fusilli
  • 200 g block feta cheese
  • 2 cups cherry tomatoes
  • 4 garlic cloves peeled
  • 1/4 cup olive oil
  • 1 tsp chili flakes
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • Salt to taste
  • Fresh basil leaves for garnish
  • 1/4 cup reserved pasta water

Method
 

  1. Preheat your oven to 200°C (400°F).
  2. Add cherry tomatoes and garlic cloves to a baking dish.
  3. Place the block of feta cheese in the center.
  4. Drizzle olive oil over everything.
  5. Sprinkle chili flakes, oregano, black pepper, and a little salt.
  6. Bake for 25–30 minutes until the tomatoes burst and the feta becomes soft and golden.
  7. Meanwhile, cook the pasta according to package instructions until al dente. Reserve 1/4 cup pasta water.
  8. Remove the baking dish from the oven and mash the feta together with the roasted tomatoes to create a creamy sauce.
  9. Add cooked pasta and reserved pasta water. Mix until fully coated.
  10. Garnish with fresh basil and serve warm.

  • Use high-quality block feta for the creamiest texture.
  • Add spinach or mushrooms for extra vegetables.
  • Adjust chili flakes based on spice preference.
