Ingredients

  • 2 medium zucchini
  • 1 cup panko breadcrumbs
  • ¼ cup grated Parmesan cheese or vegetarian hard cheese
  • ¼ cup milk dairy or plant-based
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Cooking spray

Method

  1. Wash the zucchini and cut them into fry-shaped sticks, about 3–4 inches long.
  2. Step 2: Set Up the Coating Station
  3. In a shallow bowl, add the milk.
  4. In a separate bowl, combine:
  5. Panko breadcrumbs
  6. Parmesan cheese
  7. Garlic powder
  8. Paprika
  9. Salt
  10. Black pepper
  11. Step 3: Coat the Fries
  12. Dip each zucchini stick into the milk, allowing any excess to drip off.
  13. Roll the zucchini in the breadcrumb mixture and press gently so the coating adheres well.
  14. Step 4: Arrange in Air Fryer
  15. Place the coated zucchini fries in a single layer in the air fryer basket.
  16. Lightly spray with cooking spray.
  17. Step 5: Air Fry
  18. Cook at 400°F (200°C) for 10–12 minutes, flipping halfway through cooking.
  19. The fries should be golden brown and crispy on the outside while remaining tender inside.
  20. Step 6: Serve
  21. Serve immediately with marinara sauce, garlic yogurt dip, or your favorite dipping sauce.

Notes

  • Pat the zucchini dry before coating for maximum crispiness.
  • Avoid overcrowding the air fryer basket.
  • Panko breadcrumbs produce the crispiest texture.
  • For a vegan version, use plant-based milk and vegan Parmesan.
  • Best enjoyed fresh, as zucchini fries soften as they cool.
