Ingredients

  • cups milk of choice dairy or plant-based
  • ¼ cup chia seeds
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons maple syrup or honey adjust to taste
  • 1 teaspoon vanilla extract
  • Pinch of salt
Optional Toppings
  • Fresh berries
  • Banana slices
  • Chocolate shavings
  • Cacao nibs
  • Granola
  • Chopped nuts
  • Peanut or almond butter
  • Shredded coconut

Method

  1. In a medium bowl or mason jar, whisk together the milk, cocoa powder, maple syrup or honey, vanilla extract, and a pinch of salt until smooth.
  2. Stir in the chia seeds until they are evenly distributed.
  3. Let the mixture rest for 5 minutes, then stir again to prevent the chia seeds from clumping.
  4. Cover and refrigerate for at least 4 hours, or overnight, until thick and pudding-like.
  5. Give the pudding one final stir before serving. Divide into bowls or jars and add your favorite toppings. Enjoy chilled.

Notes

  • Stir twice for the smoothest texture and to prevent clumps.
  • For a thicker pudding, add an extra tablespoon of chia seeds.
  • If the pudding is too thick, stir in a splash of milk before serving.
  • Store in an airtight container in the refrigerator for up to 5 days.
  • This recipe is naturally gluten-free and can easily be made vegan by using plant-based milk and maple syrup.
