Ingredients
  

  • 2 cups corn kernels fresh, frozen, or canned
  • 8 oz cream cheese softened
  • ½ cup sour cream
  • 1 cup shredded cheddar cheese
  • 2-3 fresh jalapeños finely chopped
  • 2 cloves garlic minced
  • 2 green onions sliced
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon black pepper
  • Fresh cilantro for garnish (optional)
  • Extra jalapeño slices or cotija cheese for topping (optional)

Method
 

  1. If using frozen corn, cook briefly and let it cool. Drain canned corn well before using.
  2. In a bowl, mix softened cream cheese, sour cream, cheddar cheese, garlic, smoked paprika, salt, and black pepper until smooth.
  3. Fold in the corn, chopped jalapeños, and green onions until evenly combined.
  4. Transfer to a skillet or baking dish and warm until the cheese is melted and the dip is creamy.
  5. Garnish with cilantro, extra jalapeños, or cotija cheese. Serve warm with tortilla chips, crackers, or fresh vegetables.

Notes

  • Adjust the jalapeño amount based on your preferred spice level.
  • Freshly shredded cheddar melts better and gives a smoother texture.
